I had been seeing these delicious little creations floating around pinterest for awhile and finally got around to creating my own version of them! Wow these have quickly become our new favorite mid-day snack. They are gluten, dairy, egg, nut and refined sugar free. My son especially loves them and calls them cookie dough:) Its great that you can use this recipe as a base to create many different versions of these energy balls!
1 c oats
1/2 c sunflower seed butter (can sub with almond or peanut butter)
1/4 c ground flaxseed
1/2 c dairy free chocolate chips or cacao nibs
2 T chia seeds
1/4 c real maple syrup or raw honey
2 T coconut oil
1 tsp vanilla
Mix all ingredients together. Refridgerate for 30 mins. Take out roll into balls and put them on a lined cookie sheet. Pop in freezer for 30 mins to an hour. Enjoy! Store in air tight container in fridge. Makes about 15 balls depending upon the size of balls.
*optional to add 1/4 c of chopped nuts, cacao powder, coconut flakes, dried fruit, protein powder
