Delicious Fresh Tomatillo Salsa

Salsa is a great snack, party food, appetizer or even enough for a meal sometimes. There are so many amazing salsa recipes out there but this one is one of my many favorites and I have been making it for years now.  I enjoy it so much that I actually have two versions of it. The first one is raw and the other the tomatillos, peppers and garlic are broiled. The raw version has more of a sour kick to it and the broiled one a more spicy/grilled taste. They are both equally good and bellow I have photos for both, really the only difference in the recipe is broiling a few of the ingredients. Anyway I love the tangy flavor of the tomatillos and whichever version you decide to make both taste so fresh! This salsa goes great with some salty corn tortilla chips (I personally prefer the organic blue corn chips with sea salt, they are soooo good!) I feel like this is a great healthy snack you can enjoy often. You can even store it in the fridge for a few days after you make it! Oh and one more note…make sure you use gloves when handling peppers, I seriously learned this the hard way! I made this a few years back with no gloves on and (I think I have some form of ocd because when I cook I wash my hands after everything I touch) after washing my hands a million times I touched my eye to adjust my contact and you can’t even imagine the horrible burning sensation that lasted at least a minute and felt like I had just used serrano pepper eye drops or something! Also not to mention my fingertips felt like they were on fire for the remainder of the day and no I am NOT exaggerating like I said I SURE LEARNED MY LESSION and I thought I would save you from having flaming fingertips that put fire to anything you touch 🙂

Ingredients
  1. - About 6 medium sized tomatillos
  2. - 2 Serrano peppers seeds removed (you can use 1 pepper if you don't wish to have it so spicy)
  3. - 2 cloves of garlic
  4. - 1 large handful cilantro
  5. - Juice of 1 lime
  6. - Juice of 1/2 lemon
  7. - 1/2 yellow onion
  8. - 1 teaspoon Himalayan pink salt
  9. - 1 teaspoon dried oregano
  10. - 1 teaspoon cumin
  11. - 1/4 to 1/2 cup water depending on desired consistency
Instructions
  1. If you choose the raw version of this recipe skip step 1
  2. 1. Cut tomatillos in half and place them, the serrano peppers, and the garlic on a cookie sheet. Put them under your broiler for about 4 minutes or until the tops have turned brown.

  4. 2. Put all of the ingredients and only 1/4 cup water in your blender and blend on high until the salsa is in liquid form if needed add the remaining 1/4 cup of water and blend again.
  5. 3. Serve chilled with healthy tortilla chips and enjoy!
