Grilled Asparagus is one of the best ways to enjoy this tasty veggie. It seems like many people use this method yet, I still see others steaming or boiling it instead. Personally not the biggest fan of the other methods and in fact I didn’t even like asparagus (neither did my husband) a few years ago since we always ate it steamed. I don’t recall the restaurant but I remember them serving asparagus as a side to many of their dishes. Lets just say it was amazing, grilled to perfection and it even had a light “smoky” taste. It even convinced my “used to be picky eater” husband to continue to eat asparagus after the fact.
Side dishes can tend to get boring sometimes so I wanted to add a little kick to the already delicious asparagus and thought about adding some lemon and garlic. A good friend of mine suggested I grill the lemon a bit for a sweeter taste and it was delightful! Still simple yet not boring. I encourage you to try it out. When buying asparagus I like to look for the thinner stalks since they cook much better and even more so grill better than the thicker stalks. The thinner ones tend to also be crispier since the fibers are packed tighter, but if you are looking for fiber in your diet you may want to go with the thicker asparagus
Snapping the ends off is so much fun! If you didn’t know this already, the asparagus snaps where its brittle so you don’t have
to worry about wondering where to cut it 🙂
Grill the lemon for a few minutes until it starts to lightly brown
Drizzle olive oil, Lemon juice, then sprinkle the fresh garlic, salt and even a little pepper if desired
Grill on Medium High heat until they become a very vibrant green and start to brown lightly (you don’t want to overcook them)
The asparagus turns out best when its not fully cooked and still crunchy.
