Healthy Lettuce Wrapped Turkey Sliders

These Turkey Sliders are to die for! They are filled with spinach and other herbs, served with an olive tapenade and a creamy yogurt sauce wrapped in lettuce. Sliders are tiny little burgers that look so appetizing with their cute little bun that you feel like you can consume 100 them. I’m not sure why sliders are more appealing to me than burgers, but they are. I just love that you can experiment and customize them. They are perfect for parties, events, small gatherings, or even just for dinner and leftovers of course. Oh, and could they be any more perfect for kids, especially with all the healthy goodies in them? Also, who says they have to be unhealthy? Not me! I came across a gem of a recipe earlier this year for turkey sliders and I was really excited to try it since it was very close to my cooking style. I made them for our daughters birthday party and they were a hit! Come on, who doesn’t love sliders! I served half with homemade slider buns, and as a healthy option the other half were wrapped in lettuce so the choice is yours, yet I recommend the lettuce wrapped version which is what I am sharing today. The original recipe was served with Tzatziki sauce but since we make something similar in Bulgaria (Snejanka) or (Tarator Recipe Here) I decided to make the Snejanka instead and also serve it with a delicious olive tapenade.

Ingredients
  1. -1 Lb. Ground Turkey
  2. -1 cup chopped fresh Spinach
  3. -1/4 cup chopped fresh Dill
  4. -1/4 cup chopped fresh Parsley
  5. -1/2 large Red Onion finely chopped
  6. -3 cloves of Garlic finely chopped
  7. -1 medium Egg
  8. -3 T. Grape Seed Oil
  9. -1 T. Himalayan Pink Salt
  10. -1 T. ground Black Pepper
Instructions
  1. In a large bowl add in all of the ingredients and mix together by hand
  2. Start making the slider patties by rolling a golf ball size meatball and gently pressing it together with your palms until they are about 1/4"-1/2" thick. (They usually shrivel up a bit when cooking)
  3. Lightly grease your cooking surface and heat to medium heat (I used my griddle but you can also make them in a pan over the stove)
  4. Grill each patty until they turn slightly brown on each size and make sure the center is cooked
  5. Serve with Olive Tapenade and Yogurt Sauce wrapped in lettuce

Ingredients
  1. -1 cup Kalamata olives pitted
  2. -2 T. fresh Lemon Juice
  3. -1 T. Capers
  4. -1 T. chopped fresh Parsley
  5. -1 Garlic Clove
  6. -2 T. Olive Oil (Extra Virgin)
Instructions
  1. Combine all of the ingredients in a food processor or blender
  2. Process, or blend until smooth

  2. -1 small Cucumber peeled and finely chopped
  3. -1/8 cup finely chopped Dill
  4. -1 Clove Garlic finely chopped
  5. -1 t. salt
