These brownies have gotten rave reviews from a lot of people! I actually served them to some people we had over for dinner and didn’t even tell them till after they had tasted them that they were paleo brownies! I laughed as I told people that they are grain, gluten, dairy and even egg free and they responded well what the heck is in them then?!! They are super yummy hot right out of the oven but can also be warmed up the next day. Since they are grain free the texture is more of a fudge like consistency instead of cake like.
7-8 medjool dates soaked in hot water 15 minutes if hard and then de-pitted
¼ tsp. Salt
½ tsp. Baking Soda
1 tsp. Pure Vanilla
1 Tbsp. Melted Coconut Oil (can sub with vegetable oil)
1 C Blanched Almond Flour
3 Tbsp Real Maple Syrup (can also sub for raw honey)
2 Flax eggs (you can use regular eggs if you want)
¼ C Cacao Powder
½ C Smooth nut butter (I use sunflower seed…almond would work great too)
¼ C Dark chocolate chips or chopped nuts would be yummy too)
Preheat oven to 325 degrees. Grease an 8 x 8 pan with foil. Combine dates, maple syrup, flax egg, nut butter and coconut oil in a blender or food processor and blend until smooth. Combine the almond flour, soda, salt, and cacao powder into a bowl and mix well then add to blender and process until all the dry ingredients are well blended. You can either pulse in the chocolate chips or sprinkle on top after pouring into the pan. When pouring into the pan be mindful that the batter will be thick. Use a wet spatula to smooth into pan. Bake 25 – 30 minutes. Serve with almond milk ice cream or coconut milk cream and enjoy!
