 Independence day is an exciting holiday filled with family, friends, BBQ’s, fireworks, and of course Celebrating our Independence! All holidays seem to involve a lot of delicious food but why not make food that’s not just delicious but healthy too! I love having healthy dishes for celebrations and parties and when you have them around (especially desserts) you are not as tempted to eat the bad food. These cups are so simple and you can even customize them to your own preference. No more sugar filled red, white, and blue food coloring desserts. Just simple, fresh, and healthy berry cups! I make 2 variations one with coconut milk and the other with yogurt. I don’t have a favorite between the two, I guess it’s just what ever I feel like at the time. If you are going to use canned coconut milk and you haven’t made Coconut whipped cream before make sure to have a back up plan. I don’t know if it is just me having bad luck, but the coconut milk doesn’t always separate properly for me. I literally went through 5 cans and 3 different days just to make these because my coconut milk would not separate. Oh what I do to share a recipe with you haha. Part of the reason I think is because my fridge is too warm? When the liquid and cream from the coconut separate properly I have noticed I had the can in the fridge for at least a week. When I made the cups to take photos the milk did separate (FINALLY)but not fully. So make sure you are prepared in case it doesn’t work for you. Oh and if you think sticking it in the freezer will help….you thought wrong. I will save you the humiliation and tell you that yes, my friends I have tried that before. Also If you are buying yogurt, purchase Greek yogurt since it is thicker.

Red White and Blue Berry Cups (Vegan)

Ingredients
  1. 3-4 cups fresh Strawberries or 2 packs cut into small pieces
  2. 3 cups of fresh Blueberries or 3 packs
  3. 1-2 cups fresh Blackberries (optional)
  4. 3 cans of full fat Coconut Milk (or 3 cans of coconut cream if you can find them)
  5. 2 Tablespoons Maple Syrup
  6. 1 teaspoon Coconut extract or Vanilla extract
Instructions
  1. Open Coconut milk cans and pour out the liquid, scoop out the cream in a bowl.
  2. Add in the Maple Syrup, and extract and whip
  3. Fill up cups with blueberries and blackberries 1/3 full
  4. Add the coconut cream to the cup and fill until 2/3 of the cup is full (I used a ziplock back to evenly squeeze out the cream in the cup, just cut a small hole in the corner)
  5. Add the fresh Strawberries on top

Ingredients
  1. 3-4 cups fresh Strawberries or 2 packs cut into small pieces
  2. 3 cups of fresh Blueberries or 3 packs
  3. 1-2 cups fresh Blackberries (optional)
  4. 5 Cups good quality Greek Yogurt
  5. 4-5 Tablespoons Maple Syrup (add more if you want a sweeter cream)
  6. 2 teaspoon Coconut extract or Vanilla extract
Instructions
  1. In a large bowl scoop out the yogurt and add in the maple syrup and extract
  2. Mix together using a large spoon
  3. Fill up cups with blueberries and blackberries 1/3 full
  4. Add the yogurt and fill until 2/3 of the cup is full (use a ziplock back to evenly squeeze out the yogurt in the cup, just cut a small hole in the corner)
  5. Add the fresh Strawberries on top
