This almond milk is sure to satisfy even the pickiest of regular dairy drinkers. A lot of the brands in the store have a few ingredients that I don’t love so much so whenever I can I make this milk. I love to drink it plain, dip my cookies in it, make hot chocolate, use it with oatmeal in the mornings or make ice cream with it. The possibilities are endless. You can feel great about serving this to your family since YOU made this.
- 1 cup almonds (soaked in water overnight)
- 3 cups water
- 3 dates (de-pitted)
- vanilla bean
- Take one cup of almonds and soak them in water overnight. The reason for soaking is because nuts have what is called phytic acid on them and soaking removes that. Doing this aids in making them easier to digest as well as helping your body absorb their nutrients more efficiently. It also makes them nice and plump for making milk:) After you have soaked them overnight give them a good rinse, throwing away the water they soaked in. Next poor the fresh 3 cups of water in a high power blender with the soaked nuts. Blend on high until nuts are blended. Next you will need to pour that into either a cheese cloth or a nut bag. I prefer using a nut bag because they are easier to clean than the cheese cloth. I found mine on amazon for I think $6. Either way strain the liquid from the almond pulp. (You can save that almond pulp and use it in breads muffins crackers granola etc). Pour the liquid back into the blender and add the dates, vanilla bean and a few drops of stevia (if desired) sometimes I get a little crazy and add cinnamon. Blend and enjoy. Since this milk is super fresh it will only last a few days in the fridge but no worries it will be gone before then!
